The FSQR Laboratory Professional will be responsible for managing all microbiological testing and results in the Waco facility. This person will manage the internal plant laboratory, conducting basic microbiology and chemistry analysis and maintaining compliance with Good Laboratory Practices. This person will be responsible for managing the Environmental Monitoring Program for the ready to eat area, the Salmonella Control Program for the primary processing area, the Pre-operational Sanitation Verification Program, the Shelf-life Testing Program, and ensuring all customer and regulatory testing is completed and reported as required. This person will be responsible for training FSQR technicians on aseptic sample technique and regular observation verification of in-plant sampling. The FSQR Lab Professional will be responsible for communication with external laboratories as well as USDA and plant management. This position may require up to 1-2 weeks of travel per year.
30% Manage internal plant lab, including maintaining compliance with Good Laboratory Practices, basic microbiology and chemistry analysis, entering samples into Lab HELIX, communicating with external labs, and packing pathogen samples for shipment to external labs. Ensure all customer required testing is completed and send COAs as required. Ensure compliance with regulatory protein fat free (PFF) program for hams produced in facility. Conduct additional chemistry and microbiological testing as requested by FSQR, R&D, and plant management. Order lab and micro sampling supplies
25% Manage Environmental Monitoring Program for Ready to Eat area, including making daily sample sheets, printing labels, training FSQR technicians on proper sample collection, helping out with sample collection as needed, managing results, keeping site list up to date, and ensuring compliance with corporate program.
20% Manage primary processing pathogen testing program, including ensuring compliance with Salmonella Control Program and USDA SIP waiver, reporting results to in-plant USDA and SIP database, training FSQR technicians on proper sample collection, helping out with sample collection as needed, and managing results.
10% Manage the Pre-operational Sanitation Verification Program, including printing daily sample sheets, training FSQR technicians on proper sample collection, keeping site list up to date, plating and counting daily swabs, and reporting results to FSQR and sanitation management.
10% Manage shelf-life testing program for facility, including scheduling of products, microbiological and organoleptic analysis, and result analysis and reporting.5% Participate in weekly food safety and USDA meetings, third party, customer, and internal audits, and other duties as assigned.
Minimum Required Qualifications
• Technical knowledge in the areas of food safety, quality assurance, and regulatory affairs
• 2 year Associates or technical degree
• Good written and verbal communication skills
• Excellent computer skills (proficiency in Microsoft Excel and Outlook a must)
• Strong work ethic, drive, and initiative
• Good organizational and analytical problem solving skills
• Leadership skills - able to lead, train, and engage FSQR technicians in microbiological sample collection
• 4 year Bachelor's degree or higher in scientific or technical field (microbiology, biology, chemistry, food science, animal science, etc.)
• 1 year or more experience in a microbiological and/or chemistry lab and/or food manufacturing FSQR / QA department
• Experience with Lab HELIX or other related Laboratory Information Management System (LIMS)Technical competency in basic microbiology and chemistry analysis
